The Fluffer Nutter

Chef Benjie is no stranger to stellar sandwiches having taken top honors at San Antonio’s Grilled Cheese Fest every year since 2018. Benjie’s innovative variation of the classic American fluffernutter sandwich is sure to drive you nuts and satisfy your sweet tooth! Chef Benjie shares his secrets for a flawless fluffernutter spread exclusively for Scene In SA. (And be sure to scarf down the real deal at Benjie’s Munch!)

Servings: One delectably delicious sandwich.

Ingredients

2 slices of sourdough bread

2 tablespoons smooth peanut butter

2 tablespoons cookie butter

3 tablespoons marshmallow fluff

2 tablespoons semi-sweet chocolate chips

2 teaspoons liquid butter alternative

powdered sugar in a shaker for dusting

Directions

  1. On one slice of sourdough, spread peanut butter to the edges of the bread.

  2. On the other slice, spread cookie Butter to the edges of the bread.

  3. Sprinkle the chocolate chips over the peanut butter spread.

  4. Carefully spoon or place the marshmallow fluff in the center of the slice with cookie butter spread.

  5. Bring the two slices of sourdough together and press gently so that the fluff spreads evenly.

  6. Put one teaspoon of liquid butter alternative on a 350°F preheated griddle.  

  7. Place sandwich on griddle and allow sourdough bread to come to a golden-brown color.

  8. As one side cooks on the griddle, add the other teaspoon of liquid butter alternative to the non-griddled side of the sandwich, making sure to spread evenly.

  9. Flip it so the opposite side gets griddled golden brown.

  10. Remove sandwich from the griddle onto a cutting board. Cut in half and sprinkle generously with powdered sugar.

Meet Chef Benjie

A resident of San Antonio for more than 45 years, Chef Ben “Benjie” De Los Santos graduated from St. Phillip’s College Culinary Program in San Antonio and completed continuing education courses at the Culinary Institute of America in Hyde Park, New York.   

With decades of experience, Chef Benjie decided to start his own business in 2014 and purchased a food truck, calling it Benjie’s Munch Truck. The truck features New American cuisine with comfort food from across the country.  After much success, in October 2017, Chef Benjie opened his first brick-and-mortar restaurant serving craft sandwiches, craft beer and craft sodas. From Chef Benjie, “I make it the way I would want to eat it. Every bite should be the best bite.” In early 2024, Benjie’s opened a second Munch Truck located at the new dog park in downtown San Antonio at the Riverwalk called “Hops and Hounds.”
